We love to innovate, after being the first to introduce shared dining and tea food pairing in the Netherlands, UMAMI by Han is taking another groundbreaking step with our Steamed Seafood Bar. First added at UMAMI by Han Eindhoven, then in The Hague and now also available at UMAMI by Han Amsterdam! This new addition to the menu combines traditional Chinese steaming techniques with contemporary flavors and an innovative approach, offering you an unparalleled culinary experience. We combine steaming techniques with fresh seafood, beautiful fish dishes and unique fusion flavors!

While The Steamed Seafood Bar is a fresh addition, at UMAMI by Han we remain true to the culinary principles we are known for: shared flavors, connection and an unforgettable dining experience. In addition to the new steamed dishes, guests can still enjoy the beloved classics and existing menus. The addition of The Steamed Seafood Bar only makes the experience more versatile and complete.

The Art of Steaming

With The Steamed Seafood Bar, UMAMI by Han shows how traditional techniques can be given a modern twist. Steaming, an ancient Chinese cooking method, is central and emphasizes purity, balance and authenticity. The new menu offers a versatile selection of steamed fish and seafood dishes, such as delicate sole inspired by Cantonese cuisine and spicy Black Cod with a Sichuan twist. In addition, guests can enjoy a richly prepared fruits de mer, fully steamed and served with innovative flavor combinations.

The result is a perfect balance between Eastern traditions and contemporary innovation, with each dish bringing to life the unique flavors and refinement of Asian fusion. An additional advantage of steaming as a cooking technique is not only the more intense and pure flavors, it is also healthier because of optimal retention of vitamins and minerals.
